Teriyaki soy sauce spring onion chicken

This is one of its kind impromptu chicken recipe. I am sort of running out of steam to follow any step-by-step tried and tested recipes online and decided to just grab whatever ingredients to cook, hence the result of this teriyaki soy sauce spring onion chicken. Yay! Sometimes this can be a good thing, isn’t it?


Anyway, the reasons for this impromptu recipe can be quite a lot but some can be seemed as excuses too. The truth is this: these few weeks have been quite hectic for me, rushing for two assignments, preparing for the up and coming major paper for the final leg of my master course, fine-tuning my company accounting software, scanning through resumes (still find some amusement), interviewing new staff, preparing for company expansion (after 7 years and not doing anything for this is RIDICULOUS!), shuttling to and fro from my office and home to bring my baby & helper out at least once a day to prevent her (or them) getting ‘too dusty’ at home, teaching and playing with my baby at least once a day, bath her twice a day, cook for everyone (yes, my helper doesn’t need to cook), occasional house hunting, grocery shopping, etc. was.no.joke. ~_~


Oh yeah, did I mention the need to wake up in the middle of the night for feeding? Oh come on…sleep through the nights is a big fat lie. You, mummies out there are just trying to brag and make me feel bad….argh.


But just take one look at her and heart melts….every effort is worth it. We are building our future together, and we are doing so much for each other, because we love Us.


Oh, mummy loves you! When you have your teeth grow, I hope you like my cooking! Instead of watching us eating every night, you should join us as soon as your teeth grow. Don’t worry, I shall teach you how to eat solid, or papa will, or either one of us will. We shall have a good time in the kitchen playing with ingredients and you will learn to appreciate food more. I shall make you a garden for the family to grow some herbs and vegetables so that we can have organic food everyday, we shall...


Ok, enough of fantasy, let’s get back to this recipe.


Ingredient:


one whole chicken, cut into pieces


a small bunch of spring onion, cut into 3cm long, seperate the white parts from the green parts


3 Tbs minced garlic


1 knob of ginger, sliced


Sauce:


2 Tbs soy sauce


2 Tbs teriyaki sauce


some BBQ sauce (optional)


a dash of white vinegar (optional)


3 Tbs Chinese rice wine


some dark soy sauce


some salt and pepper to taste


chilli flakes (optional)


1/2 Tb of corn starch with water to thicken the sauce



Method:


Marinate chicken with sauce, set aside for 10 mins.


Heat oil, stir fry ginger and garlic till fragrant.


Put in all chicken pieces (except for the sauce) and stir fry, abt 1 min.


Pour in sauce and 1/2 cup of water, when start boiling, turn down the heat to simmer the chicken for abt 10 mins or until cooked.


Put in the white parts of spring onions and corn starch water, continue cooking for abt 2 min.


Off the heat, put in all green parts of the onions, stir till green onion soften, plate up and serve with hot steaming white rice. Yum…
